Updated Paper: The Use of Precautionary Allergen Labelling for Mustard in Wheat-based Products

Published: 07/01/2026

ÌÒÉ«ÊÓƵ has published an updated version of its position paper on the use of Precautionary Allergen Labelling (PAL) for mustard in cereal-based products

This update highlights the experimental work coordinated by the Italian National Reference Centre for Allergens (CReNaRiA) and the Istituto Superiore di Sanità (ISS) that confirm the limitations of currently available analytical methods and highlight the risk of cross-reactivity with other Brassicaceae species.

These findings reinforce  ÌÒÉ«ÊÓƵ’s view that PAL for mustard should not be applied systematically in the absence of a confirmed and significant risk.

Thus, ÌÒÉ«ÊÓƵ does not recommend the systematic use of PAL for mustard on wheat-based products, as there is no confirmed evidence of significant cross-contamination and current testing methods remain uncertain. Instead we advocate for a risk-based approach using validated analytical methods and quantitative risk assessment to ensure meaningful allergen labelling.

Such an approach would greatly strengthen the protection of allergic consumers by making PAL meaningful and transparent.
